Our Tradition
We use Bhavnagri chillies for this traditional recipe, these chillies are juicy, firm and not very hot so they are ideal for this traditional Rajasthani Athena marcha.
Once the chillies arrive at our factory, they are immediately washed and dried. The stalk is removed and its cut into half, this is done to remove the seeds. Once the seeds are gone the chillies are cut into bite sized pieces.
Salt and turmeric are mixed into the chilly (this is done to remove excess water, season the chilly and give the chilly a yellowish tinge).
The cut chillies are then dried on cotton cloth for 3-4 hours to drain out the excess moisture. Rai kuria, Lime juice, vinegar are then added and the pickle is left to marinate for 24 hours. The Pickle is then spooned into porcelain jars and stored away from sunlight.
Our Athela marcha is now ready to be shipped to our customers.
